Alsatian Pork Chops Stew Recipe
Yield: 4 servings
Ingredients:
1/4 med. Bacon diced
1 c. mince onions
16 ozsauerkraut, set to drain
2 tbsp browned sugar
2 fresh potato, cut into 8 equal pieces
2 apples, peel & core
12 juniper berry, whole
6 peppercorns, whole
2 cloves, whole
1 sprig parsley
1 bay leaf
1 cheesecloth, 6″x 6″ thickness
4 roasted pork chops, 1/2″
4 beef frankfurter, score diagonal
2 c. chicken broth not salty
Instructions:
Cook the first two ingredients in Dutch Oven while stirring for 1/4 hr over an average temperature. Remove when beacon becomes crispy and set to drain.
Mix all remaining ingredients and let boiled, covered for 1/2 hr. Put the flame on low temperature.
Serve immediately.
